Ethyl cinnamate is the ester of cinnamic acid and ethanol. It is present in the essential oil of cinnamon. Pure ethyl cinnamate has a "fruity and balsamic odor, reminiscent of cinnamon with an amber note".
Cinnamic acid can immiscible in ethanol, ether and mostly nonvolatile oil. Almost insoluble in glycerol and water, slightly soluble in propylene glycol.
The p-methoxy derivative is reported to be a monoamine oxidase inhibitor.

Ethyl cinnamatemainly used in spices essences, also excellent perfume fixative. Ethyl cinnamate has sweet-balsamic and somewhat honey-like taste, it used in food flavor and food additives. Becuase its high boilling point and stability, it appropriate used for berky food.
